A traditional sugarcane crusher (कोलू) consisting of heavy rollers driven by animal or human power that squeeze juice from cut sugarcane stalks. The extracted juice is then boiled down to produce jaggery (gur), the unrefined cane sugar central to South Asian food traditions.
