Withered Tea Leaves: Spread Thin Overnight in a Cool, Airy Room
Fresh tea leaves begin to wilt soon after picking. Withering drives off excess water and lets a very slight oxidation start: spread them thin in a cool, breezy room for 8 to 14 hours, usually overnight.

Weigh the freshly picked leaves (a bud and two young leaves) and spread them in a thin layer on bamboo trays.

Set the trays on a rack in a cool, breezy room overnight, 8 to 14 hours, turning the leaves gently once or twice.
