Withered Tea Leaves: Spread Thin Overnight in a Cool, Airy Room

Fresh tea leaves begin to wilt soon after picking. Withering drives off excess water and lets a very slight oxidation start: spread them thin in a cool, breezy room for 8 to 14 hours, usually overnight. The picture: tea leaves withering in troughs (shankar s., CC BY 2.0).
