Escabeche — Fish in Vinegar and Oil

Before refrigeration, fried fish lasted a day. In escabeche it lasts a week, and it tastes better on the third day than on the first.

Escabeche is not a pickle. Nothing is preserved raw in brine: the food is cooked first, then submerged hot in a boiled mixture of vinegar, oil and aromatics. The vinegar drops the pH below 4.6 and stops bacteria; the oil forms a layer that seals out the air. Two distinct barriers working at once.

The word comes from the Arabic al-sikbāj, a Persian vinegar stew that reached Al-Andalus, passed into Spain and Portugal, and from there to Mexico, Peru, the Philippines and half the world. In each place the fish and the spices changed; the method did not.

Use real vinegar, not diluted

The vinegar must be at least 5 % acidity. A weak vinegar will not drop the pH far enough and the escabeche stops being a preserve and becomes merely a dressing.

Sterilise the jars and their lids

Boil jars and lids for ten minutes and leave them to dry upside down. A dirty jar ruins any preserve however acidic it is.

Choose a firm fish

Bonito, mackerel, sardine, horse mackerel or anchovy. Very delicate white fish falls apart in the vinegar and ends up as purée.

Salt the fish and dry it well

Salt both sides and leave for ten minutes. Then pat dry with paper: wet fish does not brown, it steams.

Fry the fish in olive oil

Brown it on both sides until cooked through. It cooks completely now — the vinegar preserves, it does not cook.

Remove the fish and keep the oil

Lift it out onto a dish. The oil in the pan already carries flavour and is the base of the escabeche — do not throw it away.

Soften onion and carrot in that same oil

Onion in slivers and carrot in thin rounds, over gentle heat until tender without taking on colour.

Add garlic, bay, peppercorns and oregano

Whole garlic cloves lightly crushed, two bay leaves, peppercorns and a pinch of oregano. One minute, without burning the garlic.

Keep the ratio: two parts oil to one of vinegar

This is the classic Spanish proportion. More vinegar preserves better but masks the fish; more oil tastes better and keeps less well.

Pour in the vinegar and boil for five minutes

Add the vinegar to the pan and let it simmer for five minutes. Boiling softens the harshness of the acid without removing its preserving effect.

Return the fish and turn off the heat

Set the pieces back in the pan, cover and take it off the heat. They should be covered by the liquid.

Jar it hot and cover completely

Transfer fish and vegetables to the jars and cover with the liquid. Any piece that sticks out spoils first — the oil is the lid.

Cool it and keep it in the fridge

Let it come down to room temperature on the counter, then refrigerate. This is a refrigerator escabeche: it keeps one to two weeks, not a year.

Wait three days before eating it

On the first day it tastes of fried fish with vinegar. By the third the flavours have knitted together and the real escabeche appears.

History & Context — from Persia to half a dozen continents

The name and its journey. Escabeche comes from the Andalusi Arabic al-sikbāǧ, and that from the Persian sikbāj, a vinegar-cooked meat stew documented in medieval Arabic cookbooks — it already appears in the thirteenth-century Kitāb al-Ṭabīḫ. It entered the Iberian peninsula with Al-Andalus, was adapted to fish, and later travelled on Spanish and Portuguese ships. From that come Mexican escabeche of chillies and vegetables, Peruvian escabeche, Valencian escabetx, Jamaican escovitch, Filipino escabeche and the original sikbāj, all children of the same method.

Why it works. The vinegar takes the food's pH below 4.6, the threshold beneath which Clostridium botulinum cannot grow or produce toxin. That is the limit health authorities use to separate acid foods from low-acid ones, and it is why escabeche is safe at room temperature for days while the same fried fish is not. The oil adds a second, purely physical barrier: it excludes oxygen from the surface, slowing both fat oxidation and aerobic moulds.

Cook first, not after. This is the difference from a pickle. In a pickle the vegetable goes in raw and the acid transforms it slowly. In escabeche the food is cooked through before it ever reaches the liquid, so the acid only has to preserve it. That is why escabeche takes meat, game, partridge and chicken just as readily as fish, and why it holds texture instead of breaking it down.

An honest warning about how long it keeps. Traditional escabeches lasted weeks because they carried far more vinegar and considerably more salt than modern ones, and because they were kept cool and dark. A modern escabeche, made to today's taste, is a refrigerator preserve good for one to two weeks. If someone claims a homemade escabeche keeps for months outside the fridge, they are describing a different recipe — much more acidic and much saltier than this one.
