Peppermint (Mentha x piperita) is a natural hybrid of watermint and spearmint that has been used as a digestive remedy for at least three thousand years. Dried peppermint leaves were found in Egyptian pyramids dating to approximately 1000 BCE. The ancient Greeks and Romans used mint after meals to aid digestion, and the practice persists worldwide today. The primary active compound is menthol, which constitutes 30-50% of the essential oil in the leaves. Menthol works by relaxing the smooth muscle of the gastrointestinal tract — it blocks calcium channels in the muscle cells, reducing spasms and allowing trapped gas to pass. This antispasmodic effect is why peppermint is so effective for bloating, gas, intestinal cramps, and irritable bowel symptoms. Menthol also activates cold-sensitive TRPM8 receptors in the mouth and throat, producing the characteristic cooling sensation. The leaves are 4-9 cm long with serrated edges and often have a purplish tinge, especially on the undersides and stems. Flowers are small, lavender-purple, and appear in dense terminal spikes. The plant spreads by underground runners (stolons) and typically forms dense patches in moist ditches, stream banks, and garden edges. The crush-and-smell test is definitive — no other common plant produces peppermint's intense cooling menthol scent.

Harvest just before or at the beginning of flowering — this is when menthol concentration in the leaves is highest. Cut the stems about 5 cm above the ground with scissors or a sharp knife, taking the top two-thirds of the plant. Harvest in mid-morning after dew has dried but before the heat of the day causes essential oils to volatilise. The cut plant will regrow from the base and can be harvested two to three times per growing season. Collect into an open basket — do not compress the leaves, as bruising starts the oxidation of volatile oils.

Strip the leaves from the stems by running your fingers down each stem from top to bottom — the leaves pull away cleanly at the nodes. The tender top leaves and small terminal buds are the most flavourful and contain the highest menthol concentration. The stems are woody and bitter and should be discarded or composted. Inspect the leaves and remove any that are yellowed, damaged, or show signs of insect feeding. A single harvest from a healthy patch yields enough leaves for months of tea.

Spread the leaves in a single layer on a drying rack lined with clean cloth, in a warm, well-ventilated area out of direct sunlight. Alternatively, tie small bundles of stems with leaves attached and hang them upside down in a dry, airy room. The leaves are fully dry when they crumble crisply between your fingers — typically five to ten days depending on humidity. Avoid artificial heat above 35 degrees Celsius, which drives off the menthol before it can be locked into the dried leaf structure. Properly dried peppermint retains its menthol content and strong aroma for up to eighteen months.

Crumble the fully dried leaves gently and transfer to an opaque, airtight container. Store in a cool, dark place. Light degrades menthol and other volatile terpenes, and air allows oxidation. Label with the harvest date — dried peppermint at peak quality is best used within one year, though it remains usable for up to eighteen months. If the dried leaves no longer release a strong menthol scent when crushed between your fingers, they have lost most of their therapeutic potency and should be replaced with a fresh harvest.

Place one to two tablespoons of dried peppermint leaves (or a small handful of fresh leaves) into a drinking vessel. Heat clean water to just below boiling — approximately 85 to 95 degrees Celsius. Pour the hot water over the leaves. Cover the vessel immediately to trap the menthol vapour, which evaporates readily with the steam. Steep for five to seven minutes. Longer steeping extracts more tannins and produces a more bitter, astringent tea — fine for medicinal use but less pleasant for casual drinking.

Strain the infusion through a fine mesh strainer or cloth to remove the leaf material. The tea should be a clear, pale greenish-yellow with a strong, clean menthol aroma. Peppermint is very safe for most people, but has specific contraindications. Do not give strong peppermint tea to children under two years old — menthol can cause breathing difficulties in very young children. People with gastroesophageal reflux disease (GERD or acid reflux) should use peppermint cautiously — the same muscle-relaxing effect that relieves intestinal spasms can relax the lower oesophageal sphincter, allowing stomach acid to flow upward and worsening heartburn. People with gallbladder disease should consult a physician before regular use, as peppermint stimulates bile flow. For everyone else, peppermint tea is one of the safest and most effective herbal medicines available.
