The Meat Mincer: A Screw That Feeds a Knife

Chopping meat fine by knife is slow and uneven. The hand-cranked mincer does it continuously: a screw in a cast barrel carries the meat forward and forces it against a perforated plate, and a cross-shaped knife turning with the screw shears off each strand as it comes through the holes. Change the plate and the same machine makes coarse or fine mince. It is the grain auger's cousin: a screw moving a material along a tube — here against a plate, with a knife at the end. This rung works out the screw's delivery and the plates' open area, and takes a mincer apart to fit its knife correctly.

The mincer's feed screw works like a grain auger in its tube. The embedded blueprint measures an auger's delivery and fill.

Strip, fit and test a mincer

Clamp a hand mincer to a table. Unscrew the ring, take out the plate, knife and screw, and lay them out in order. Check the knife: its four blades must be sharp and flat. Reassemble with the knife's flat cutting faces AGAINST the plate — the most common mistake is to fit it backwards — and the ring just tight enough to hold the plate without jamming the screw. Chill the meat hard (not frozen) and cut it into strips. Feed with the pusher, never the fingers. Weigh what comes out in one minute through the fine plate, then the coarse plate, and look at the strands: cleanly cut, or smeared. Then fit the knife backwards on purpose and repeat — see the smearing the notebook describes. Wash every part hot and dry it at once.

Context and honest limits

Screw-fed mincers with a knife and plate became standard kitchen and butcher's tools in the nineteenth century, cast in iron and clamped to the table; electric versions and food processors use the same screw, knife and plate. **Honest limits.** The notebook's fill fraction and plate hole counts are illustrative. Raw meat hygiene matters more than the mechanics: keep it cold, clean every part hot, and never mince meat that has warmed.
