Diamond-Breaker Scroll Dasher Churn: A Wheel in Rising Sections Throws the Cream Up and Out

Isaac N. Buck of Elgin, Illinois, received US 18,382, dated 13 October 1857, for a revolving dasher that is "a sectional scroll with diamond shaped breakers" on its upper side, which raises the cream, throws it out and up, and leaves a hollow at the centre for air to pass down and under the wheel. This rung prints the scroll wheel and step, builds the churn and makes butter.

"The nature of my invention (or improvement) consists in the form of the revolving dasher which is a sectional scroll with diamond shaped breakers, on the upper side and made a part of the dasher being fastened solid to the sectional scroll or wheel dasher and attached to an upright shaft which when put in motion raises the cream from the bottom of the churn throwing it out and up and leaving a hollow in the center so that the air passes down and out under the wheel and up through the cream."

Shaft and wheel

Stand the step in a straight-sided round food-grade container about 190 mm across, a 10 mm square hardwood shaft in it, and push the wheel down the shaft onto the step, breakers up.

Lid and crank

Pass the shaft through a hole in the lid and glue a pine crank arm and dowel handle on top.

Churn

Let the heavy cream stand until it reaches about 15 °C, checked with the thermometer. Pour in 1.5 litres. Crank briskly in the direction the sections rise; watch for the hollow at the centre; time until the butter comes. Pour off the buttermilk, add cold water, churn a little and pour off again until it runs clear; work in a pinch of salt and weigh the butter.

History and honest limits

**Isaac N. Buck** of Elgin, Kane County, Illinois, US 18,382, 13 October 1857, a "Churn-Dasher." He made the wheel of wood and wrote that the breakers gather the butter "into one round ball near the shaft." He claimed the diamond breaker in combination with the wheel. A container and printed parts stand in for his. FDM prints hold food in their layer lines, so wash well and replace when worn.
