Funnel-Tube Cap-Plate Dasher: Streams Up the Funnels, Split by Wings, Thrown From a Cap

Sherman shaped his dasher so the cream is forced through it in streams on the way down and thrown off it in a sheet on the way up. Robert S. Sherman of Naponock, New York, received US 7,550, dated 6 August 1850, for a churn-dasher of a concave bottom plate with four or more inverted funnel-shaped tubes "projecting upward and outward" from openings in it, radial wings "whose outer edges are inclined upward and outward directly over the upper or smaller ends of the funnel shaped tubes," and a circular cap plate over the wings. On the descent the cream is forced up through the tubes "against the inclined edges of the radial wings" and thrown out "nearly horizontally against the sides of the churn tub." This rung works out the streams, then prints the dasher in one piece, fits it to a staff, and makes butter.

Cones and disks that direct the cream before it

The embedded blueprint uses an inverted cone and a disk in a rotary churn. Sherman puts funnels, wings and a cap plate on an up-and-down dasher.

"The ascent of the dasher and staff lifts the cream in a body and throws it from the cap plate or disk in a circular sheet, which facilitates the collection of the particles of butter as they are formed."

Print the dasher

Print the dasher in one piece, base down, with supports under the cap (/uploads/blueprints/funnel-tube-cap-plate-dasher-dasher.stl): concave bottom plate, four inclined funnels over its openings, four wings and the cap. Print in PETG at 0.2 mm layers, 30 % infill, 4 walls; wash before first use.

Drill the lid of a food-grade bucket at its centre for the staff.

Dash and make butter

Let the heavy cream stand until it reaches about 15 °C, checked with the thermometer. Pour in 2 litres. Work the staff up and down; time until the butter comes. Pour off the buttermilk, add cold water, churn a little and pour off again until it runs clear; work in a pinch of salt and weigh the butter.

History and honest limits

**Robert S. Sherman** of Naponock, Ulster County, New York, received US 7,550, dated 6 August 1850. He wrote that the sprays have "the effect of uniting the particles of butter in the space of a few minutes"; that is his claim. He claimed the combination of the funnel-shaped tubes, the radial wings inclining over their ends, and the circular cap plate. **Honest limits.** A printed dasher and a bucket stand in for his. FDM prints hold food in their layer lines, so wash well and replace when worn. Your times and weights are the result.
