Hardwood Smoking Chips Split from Oak Offcuts
Smoking wood is hardwood: oak and alder in Europe, fruit woods, hickory and maple in North America. Pine and fir are avoided, as their resin gives a harsh soot. Split clean, bark-free offcuts into small chips and keep them dry.
