Wheat Flour Ground on a Quern
Every grain of flour before water and wind mills was ground between two stones by hand. A rotary quern turns an upper stone on a lower one; grain fed through the eye is cracked and ground and spills out at the rim. Ground once and left unsifted, it is wholemeal; sifted through a fine sieve, the bran is taken out and the flour is lighter.
Hand-sifted flour is still not the white flour of roller mills.

Pick stones and chaff out of dry wheat and weigh it.

Grind
Feed a small handful into the quern's eye and turn the upper stone steadily. Collect the meal at the rim; grind it a second time for finer flour.

Keep it as it is for wholemeal. For lighter flour, shake it through a fine sieve and keep the bran separately. Weigh both.

Store in an airtight container in a cool place; wholemeal goes stale faster than sifted flour.
