Whole Milk: Hand Milking with the Hegelund After-Milking (USDA, 1904)
Milking a cow by hand the way the 1904 USDA bulletin recommends: the whole hand, thumb turned out, closing the fingers in order from the top of the teat; then the Hegelund manipulations of the udder to draw the last, richest milk.
The after-milk averaged about 1 pound a day per cow and was 2.4 times as rich in butter fat as the ordinary milk.

Milk with the whole hand
Milk with the whole hand
Milk with the whole hand, not the thumb and forefinger alone, with the thumb turned out and never closed inside the palm. Open the hand wide enough for the teat to fill fully, helped by a slight upward pressure on the udder; then close the thumb and forefinger, followed by the second, third and fourth fingers in that order.

First manipulation
Press the right quarters against each other (one quarter at a time if the udder is very large): left hand on the hind quarter, right hand in front on the fore quarter, thumbs outside and fingers in the division between the halves. Press the hands together and lift toward the body three times, milk out what has collected, and repeat until no more comes; then do the left quarters (Fig. 1).

Second manipulation
Press the glands together from the side. Milk each fore quarter by itself with one hand, fingers spread, outside the quarter and the other in the division between the fore quarters; press and milk the teat. Then for the hind quarters put a hand outside each, fingers spread and turned up, thumb just in front of the hind quarter; lift, grasp into the gland from behind and the side, and lower to draw the milk. Repeat until no more comes (Fig. 2).

Third manipulation
Grasp both fore teats with partly closed hands and lift them with a push toward the body, pressing the glands between hands and body; draw the milk after each three pushes. When the fore teats are empty, milk the hind teats the same way (Fig. 3). Draw all the milk at every milking.
