Salt Panning

Seawater is about three and a half per cent salt, and getting that salt out is the oldest chemical industry there is. The method has two forms and the choice between them is decided by climate, not by preference. Where the sun is strong and the summer dry, you let shallow ponds evaporate for months and rake up what crystallises. Where it is not — northern Europe, coastal Britain — you must boil, and boiling means fuel, which means salt made in a cold climate has always been expensive. That expense shaped history: salt taxes started revolutions, salt roads ran across continents, and the word salary comes from the Latin for a soldier's salt allowance. What you are separating is a solution, and the tool for separating a solution is a phase change.

Measure what you are starting with

Know the concentration before you try to concentrate it.

  1. Make a brine of known strength, or use real seawater.
  2. Weigh a measured volume, evaporate a small sample to dryness, and weigh the residue.
  3. Calculate the percentage by mass.
Seawater runs about 3.5% — roughly 35 g of dissolved solids per litre. That means 965 g of every kilogram you handle is water you have to remove, and removing it is the entire cost of the industry.

Concentrate before you crystallise

Historic salterns never boiled seawater from full strength. They pre-concentrated it for free.

  1. Let a shallow tray of brine stand in warm air or sun until the volume has dropped substantially.
  2. Measure the concentration again.
  3. Only then move it to gentle heat.
Sun and wind are free; fuel is not. Coastal salterns ran a series of ponds, moving brine along as it strengthened, and only the last stage was boiled. Skipping this and boiling from the start multiplies fuel use several times over for the same salt.

Crystallise gently and watch the order

Different salts drop out at different concentrations, and that is a tool.

  1. Heat the concentrated brine gently — do not boil hard.
  2. Watch for the first crystals forming as a skin at the surface.
  3. Skim them off as they form.
Calcium sulfate comes out FIRST, before sodium chloride, so the earliest crystals are gypsum and were discarded. If you evaporate all the way to dryness you also get the bitter magnesium salts at the end. Good salt is what you take from the MIDDLE of the process — stopping early and stopping late are both deliberate.

Make flakes, and then make grains

Crystal shape is set by how fast you drive the evaporation.

  1. Evaporate one batch very slowly and undisturbed.
  2. Evaporate a second with more heat and occasional stirring.
  3. Compare the crystals under magnification.
Slow and still gives large hollow pyramids — flake salt, which is why fleur de sel and Maldon-style salts are made by skimming a quiet surface. Fast and stirred gives small dense cubes. Same compound, same purity, entirely different product and price.

History and context

Salt was the only practical way to preserve meat and fish for most of human history, which made it strategic rather than merely useful. Salt roads — the Via Salaria to Rome, the trans-Saharan routes trading salt for gold — existed because inland populations could not make their own.

It was taxed, and the taxes were hated. The French gabelle was among the most resented impositions of the ancien régime, with mandatory purchase quotas and vicious penalties for smuggling; it is repeatedly named among the grievances of 1789. In India, the British salt monopoly and tax on a substance everyone needed and could otherwise gather from the sea was the target Gandhi chose for the Salt March in 1930 — precisely because the injustice needed no explanation.

The northern fuel problem drove real invention. Where sun would not do the work, salt makers burned peat, coal and wood, and evaporated brine in lead or iron pans. In parts of the Netherlands and eastern England they burned salt-soaked peat and leached the ash — a method that stripped whole landscapes. Graduation towers, where brine trickles over huge stacks of blackthorn twigs to expose it to wind, were built to cut fuel use, and several still stand.

Today most salt is mined as rock salt or produced by solar evaporation in hot climates, and most of it never goes near food — chemical industry, particularly chlor-alkali production, consumes the majority. The Solvay process in this catalogue is one of the reasons.
