Fine Sea Salt from Coarse Salt
Solar salt and sea salt from the pans come as coarse, often damp crystals. For baking, brines and the table they are dried and ground fine. Damp salt smears in the mortar and clumps in the jar, so it is dried first.
Plain salt only: no anti-caking agent and no iodine, unlike most shop table salt.

Spread coarse sea salt thinly on a baking sheet and dry it in a low oven, stirring once, until it runs freely. Let it cool.

Grind
Grind a few spoonfuls at a time in the mortar until it feels like fine sand.

Shake it through the fine sieve into a bowl. Grind what stays on the mesh again.

Fill a dry jar and close it tightly; salt takes up moisture from the air and cakes.
