Ice Cubes and Crushed Ice

Water expands by about 9 % as it freezes, so trays are filled short of the brim. A home freezer at about -18 °C freezes small cubes in a few hours. Crushed ice, for cooling condensers and chilling fast, is cubes broken in a cloth or bag with a rolling pin.

Fill the trays

Fill the trays with clean water to just below the rim of each cell.

Freeze

Set them level in the freezer and leave until frozen right through, about 4 hours.

Release

Twist the tray, or run cold water over its back for a few seconds, and tip the cubes out.

Crush

For crushed ice, wrap cubes in a towel or put them in a bag and strike with the rolling pin.
