Japonica Rice Grown in a Flooded Paddy, Hulled and Polished

Short-grain rice, mostly japonica, is oval and sticky. Raise seedlings in a seedbed, transplant them by hand into a paddy flooded a few centimetres deep, and drain it about a week before harvest. Reap when the grain is at 20 to 25 % moisture, thresh, dry it in the sun, hull it to brown rice and polish off the bran for white rice. The picture: our diagram, paddy to polished rice.
