The Pepper Mill: A Toothed Cone Turned by the Lid
Ground pepper loses its aroma within weeks; whole peppercorns keep for years. A table mill grinds them at the moment of eating.
Pierre Chalas of Valentigney, France, assignor to Peugeot Frères, received US 210,837, dated 17 December 1878 (filed 5 October 1878), for a "combined pepper-mill and caster": a small box with a toothed cone turning in a fixed toothed concave. "It has no crank-handle for rotating the grinding-cone, this being effected by turning between the thumb and fingers the top or bottom of the mill itself", and a milled nut on the spindle "serves to regulate the distance between the grinding-surfaces".
This rung works out how the nut sets the grind and how many breakages a corn needs, then grinds at three settings and sieves the result.

"This invention relates to a pepper-mill and caster combined, specially intended for use at table for grinding the pepper as required for consumption. It consists of a small box of wood, metal, or other suitable material ... and having one or more apertures, through which the ground pepper is allowed to fall onto the dish or plate. It has no crank-handle for rotating the grinding-cone, this being effected by turning between the thumb and fingers the top or bottom of the mill itself, to which the grinding cone is connected."
The top and spindle are "secured together by the milled nut m, which also serves to regulate the distance between the grinding-surfaces of the cone f and concave or cylinder b, in order to vary the fineness of the ground product."

Grind at three settings
Fill the mill with black peppercorns. Set the adjuster to its coarsest and grind 20 turns onto paper; weigh the result. Tighten it one turn and grind 20 more; tighten again and repeat.
Sieve each grind through the graded sieves and weigh each fraction. Plot grams per turn and the size spread for each setting: finer settings give less per turn and a narrower spread.

**Pierre Chalas** of Valentigney, France, assignor to **Peugeot Frères**, filed US 210,837 on 5 October 1878; it is dated 17 December 1878. A second arrangement puts the mechanism at the top and turns it from the foot.
**Honest limits.** The patent gives no thread or angle. Pitch, cone angle, corn size and the breakage fraction in the notebook are examples.
