Valved Hollow-Staff Plunger Churn: A Valve at the Top, Air Forced Out at the Foot
Ellicott's dasher draws its air down through its own handle.
Peter F. Ellicott of Philadelphia, Pennsylvania, received US 7,454, dated 25 June 1850, for an atmospheric churn: "in any ordinary vertical churn," an upright hollow staff connected at the bottom to a square or round hollow plunger open below, with air holes in its sides "1/2 inch in diameter," and a valve inside the staff at its top "so arranged that when the said staff and plunger are raised, the valve will open," and when forced down "the valve will close, and the atmospheric air in the plunger will be forced through the body of the milk or cream."
This rung works out the air per stroke, then prints the plunger and valve cap, fits them to a hollow staff, and makes butter.

Print the hollow plunger open end down (/uploads/blueprints/valved-hollow-staff-plunger-churn-plunger.stl), with its twelve side holes and a socket for the staff, and the valve cap (/uploads/blueprints/valved-hollow-staff-plunger-churn-valve-cap.stl). Print in PLA at 0.2 mm layers, 30 % infill, 4 walls; wash before first use.

Cut a length of 12–13 mm food-grade tube as the hollow staff, as long as the churn is deep plus 150 mm, and glue it into the plunger's socket. Glue a small leather flap inside the valve cap over its port, hinged on the cap's pin, so it lifts to let air in as the staff rises and seats as it falls; glue the cap on the staff's top.

Drill a food-grade bucket's lid at the centre for the staff, a little larger than it.

Dash and make butter
Let the heavy cream stand until it reaches about 15 °C, checked with the thermometer. Pour in 2 litres. Work the staff up and down; bubbles should burst from the plunger's holes on each down-stroke. Time until the butter comes. Pour off the buttermilk, add cold water, churn a little and pour off again until it runs clear; work in a pinch of salt and weigh the butter.

**Peter F. Ellicott** of Philadelphia, Pennsylvania, received US 7,454, dated 25 June 1850. His drawing shows the plunger with knobs outside and a full-size section of the valve. He claimed "a hollow staff connected with a square or round hollow plunger, with a valve placed at the top, or at any point inside of said staff," to be used in any vessel containing milk or cream.
**Honest limits.** Food-grade tube and printed parts stand in for his staff, plunger and valve; our holes are smaller than his half inch. FDM prints hold food in their layer lines, so wash well and replace when worn. Your times and weights are the result.
