Beechwood Shavings Planed from Beech Boards
Schützenbach's vinegar generator of 1823 ran alcohol down over beechwood shavings, and cut the souring from months to one or two weeks. The curled shavings give the bacteria a large surface with air all through. Plane them from a dry beech board with a sharp hand plane.
