Two-Frame Percussion Dasher Churn: The Upper Frame Strikes the Lower at Every Down Stroke

W. H. Burnham and B. Hibbard of Cortland, New York, received US 15,412, dated 29 July 1856, for a dasher of two slatted frames loosely joined: at each down stroke the lower frame meets the bottom and the upper frame is "driven violently in the contact with the lower frame," forcing the cream up between the bars in thin sheets. This rung prints the two frames, key and wedge, builds the churn and lever, and makes butter.

"Then when the dasher is forced downward, the lower frame of the dasher will be first arrested by the bottom of the box, which will cause the upper frame of the dasher to be driven violently in the contact with the lower frame thereof and by so doing, will cause the cream which is carried down before it, to be driven with percussive force into the spaces between the bars of the lower frame and thence up in thin sheets."

Print the parts

The dasher

Glue a 12 mm square hardwood handle into the lower frame and two 6 × 12 mm laths into the upper frame's sockets. Cut a slot 40 mm long down both laths. Set the handle between the laths and push the key through a hole in the handle and through the slots.

Box and lever

Use a rectangular food-grade container about 210 by 150 mm on a pine platform. Hinge a pine upright at one end of the platform and pin a pine lever to its top; pin the two laths to the lever above the box.

Churn, then gather

Let the heavy cream stand until it reaches about 15 °C, checked with the thermometer. Pour in 2 litres. Work the lever steadily; time until the butter comes. Push the wedge into the slots above the handle to hold the frames apart, and work on slowly to gather the butter. Pour off the buttermilk, add cold water, churn a little and pour off again until it runs clear; work in a pinch of salt and weigh the butter.

History and honest limits

**W. H. Burnham and B. Hibbard** of Cortland village, Cortland County, New York, US 15,412, 29 July 1856, signed 5 June 1856; the drawing reads "Reciprocating Churn." They claimed the dasher of two independent frames combined with each other and the lever. A container, pine and printed parts stand in for theirs. FDM prints hold food in their layer lines, so wash well and replace when worn.
