Double-Concave Perforated Disk Dasher: Two Tin Domes With Half-Covered Holes

Marsh improved the dasher of "the plain old-fashioned churns so long used by farmers generally." Joseph Marsh of Petersburg, Menard County, Illinois, received US 7,527, dated 30 July 1850, for a "double-concave perforated discoid churn-dasher": two convex pieces of tin or other suitable material, "perforated and placed on the upright," about six inches across with holes about three-quarters of an inch, "the several holes in B made to cover about half of the several holes in C." It works in a straight-sided churn by raising and pushing it, or by a lever. This rung works out the open area, then prints the two domes and spacer, fits them to a staff, and makes butter.

An improved common dasher before it

The embedded blueprint improves the common dasher with pitched oars. Marsh uses two perforated domes whose holes half overlap.

Print the domes

Print the two domes (/uploads/blueprints/double-concave-perforated-disk-dasher-disk-a.stl and /uploads/blueprints/double-concave-perforated-disk-dasher-disk-b.stl): 152 mm across with 19 mm holes, the second turned so its holes half cover the first's. Print the spacer ring (/uploads/blueprints/double-concave-perforated-disk-dasher-ring.stl). Print in PETG at 0.2 mm layers, 30 % infill, 4 walls; wash before first use.

Assemble

Glue the two domes back to back on the spacer ring, convex sides out, holes half overlapping, and glue them on the foot of a 12 mm hardwood dowel staff.

The churn

Use a straight-sided food-grade container about 160 mm across and 300 mm tall, so the dasher fits closely without rubbing, as he said. Drill its lid for the staff.

Dash and make butter

Let the heavy cream stand until it reaches about 15 °C, checked with the thermometer. Pour in 2 litres. Work the staff up and down; time until the butter comes. Pour off the buttermilk, add cold water, churn a little and pour off again until it runs clear; work in a pinch of salt and weigh the butter.

History and honest limits

**Joseph Marsh** of Petersburg, Menard County, Illinois, received US 7,527, dated 30 July 1850. He wrote that it creates "a suction of atmosphere through the milk ... that excels any improvement in churns of ancient or modern invention"; that is his claim. His churn was straight inside "instead of cone-shaped." He claimed the double-concave perforated discoid churn-dasher. **Honest limits.** Printed domes stand in for his tin. FDM prints hold food in their layer lines, so wash well and replace when worn. Your times and weights are the result.
